Nicaragua Segovia (Fair Trade, Organic)
Full-bodied and bold. Nice acidity, but milder than in most Centrals. A complex flavor with creamy dark chocolate and toasty hazelnut undertones. This coffee makes a nice espresso when roasted Dark French. A wet-processed SHG typica from the Segovia region.
Nicaragua is emerging as another strong Central American producer. Despite many obstacles, including the recent Hurricane Mitch, the industry is getting more organized, and the growers are producing larger, better quality, and more consistent crops. The very remote and rugged Matagalpa region of North Central Nicaragua produces the best quality coffees. The region is located about 90 kilometers Northeast of Managua.
